Hi! Happy Saturday! This morning we packed up a zillion cookies to send to a local hospital as a tiny token of thanks for all the healthcare workers doing so many amazing things - and in with them were these brown butter salted caramel popcorn cookies!

I LOVE popcorn, probably more than most. I have it for afternoon tea maybe 3 or 4 times a week, and my current favourite thing is buying all different kinds of kernels and seeing how they pop up! One of the most popular recipes on the site is these brown butter salted caramel cookies, which have a brown butter base, chunks of chocolate and chunks of caramel, so I wanted to see if I could adapt the recipe to also sneak some popcorn in. I used freshly popped popcorn but if you have the butter flavoured microwave stuff, that would be insanely good in here too.

It took a tiny bit of testing - the first time I didn’t use enough butter and put in waaay too much popcorn, and made a very weird spongy rock situation that didn’t resemble a cookie in the slightest, but I tweaked some things and round two came out great. The brown butter base works so well, and the caramel bakes up into perfect chunks throughout the cookie, then the popcorn adds a lovely crunch which goes so well with the chocolate and caramel. These are so, so good - I love them and I think you will too! x

20g doesn’t sound like lots of popcorn but popcorn doesn’t weigh very much, so just trust me here. I popped about ¼ cup of kernels which gave me enough popcorn for the cookies and for a snack.
